Luke Roberts is the Executive Chef of the historical Double Eagle in Old Mesilla, NM. In the four years since taking the helm outside of Las Cruces, Double Eagle has been named the Best Steakhouse in New Mexico by notable news sites such as MSN.com. For the past three consecutive years, Roberts has been nominated for the New Mexico Restaurant Association’s Chef of the Year Award.
Prior to taking the reigns of the Double Eagle - spearheading high-end cuisine in a more casual bistro setting - Roberts led the way at the famed Red Mountain Bistro on El Paso's west side.
Chef Roberts first spread his wings when he left the Southwest for Boston, MA. Absorbing all that the East Coast had to offer, he obtained his first Executive Chef position at Panificio in the historic Back Bay neighborhood.
Roberts’ love for the bounty of the sea is apparent in his current menus at the Double Eagle.
“I’m a firm believer that every great steakhouse must also have great seafood”.
This comes through with his monthly First Friday Seafood Night Menus, where he features new items each month reflecting the freshest catch of the season.
